Ingredients:
2 green peppers
1 small onion, chopped
2 garlic cloves, crushed
salt and pepper
2 tbsp olive oil
3 chopped tomatoes
3 eggs
Directions:
1. In pan, heat the oil, add the peppers and onions. Saute together.
2. Before peppers are fully cooked, add tomatoes and garlic and continue cooking until tomatoes are soft. Remove from heat.
3. With another pan, heat some oil. Stir beaten eggs in a bowl until well mixed. Add to heated pan.
4. Add other cooked ingredients on one half of the eggs. When it's cooked, carefully turn the edge of the plain eggs over the other side and continue cooking until done.
5. Serve with buttered toast, if desired.
