Ingredients:
4 boneless skinless chicken breast halves (6 oz each)
2 tsp salt-free southwest chipotle seasoning blend
1 tbsp olive oil
¼ cup enchilada sauce
½ cup shredded sharp cheddar cheese
2 tbsp minced fresh cilantro
Directions:
1. Sprinkle chicken with seasoning blend. In an ovenproof skillet, brown chicken in oil. Top with enchilada sauce, cheese and cilantro.
2. Bake at 350 for 18-20 minutes or until a thermometer reads 170 degrees.
