Light and chewy, these are the perfect spring treat!
Yields: 2 dozen cookies
Ingredients:
1 box (18.25 oz) package lemon cake mix
2 eggs
1/3 cup vegetable oil
1 tsp lemon juice
1/4 cup flour
1/3 cup powdered sugar
Directions:
1. Preheat the oven to 375.
2. Pour cake mix into a large bowl. Stir in eggs, oil and lemon juice until well blended.
3. Drop by teaspoon full into a bowl of powdered sugar. Roll around until well coated. Place on cookies sheet 2 inches apart.
4. Bake for 9-11 minutes. Do not overbake. The bottoms will be lightly brown, but the tops will not.
