Ready in: 10 minutes
Ingredients:
2 bell peppers, any color
4 medium eggs
salt and pepper
1 tsp oil
Directions:
1. Remove stem from pepper. Use spoon to remove seeds and "beef" of pepper. Carefully cut into 1" circles. Do not press too hard or they will bend and snap.
2. Place in frying pan with oil. Cook pepper for about 3 minutes, flipping about half way through.
3. Crack egg and place in middle of pepper. Salt and pepper to taste.
4. Cover and cook for about 2-3 more minutes, or until egg is cooked to taste.
5. Serve with toast and grapes.
Yum! You can also top with Parmesan cheese, fresh basil, or diced tomatoes.
